Plumb Jelly

Since I haven't canned enough... sarcasm... a co-worker brought me some plumbs.
I couldn't help myself.
I found a recipe for no peel and no pectin plumb jelly!  EASY.

I think I had about 2-3lbs of plumbs but I don't know for sure.

You just wash them and do a quick slice to pit them.
Depending on how many plumbs you have and how ripe they are... I added about 3/4 cup sugar
and let them sit for an hour.

I can. I can. With the pressure cooker!

I've wanted to try pressure canning potatoes for a few years now.  I remember a friend doing it and I thought it sounded like the greatest idea ever.

The whole family loves mashed potatoes, but lets face it... after a long day at work, I really don't want to make them.

This helps speed things up a lot.  They're already washed, scrubbed, peeled and cubed and basically cooked.  All you really have to do is warm them up and mash them.  Because instant potatoes are not allowed in my house- yuck.  I just add a little milk and butter to them and they're done!

To pressure cook
Wash, scrub, peel and cube.

Can you do the Can-Can?

I've heard the term "Crocktober", I feel more like "Cantober" is more accurate though.  Mostly because I use my crock pot all year round.

I've done cowboy-candy and dill-icious-pickles and salsa...

Crock Pot Apple Butter
14 medium apples
2 cups of water
2 tbsp olive oil
2 tbsp cinnamon
2 tbsp pumpkin pie spice

Canning Salsa

Wear gloves when working with any sort of hot peppers!

Ingredients  To make about 12 quarts
  • 45 +/- plum (Roma) tomatoes, skinned and finely chopped
  • 12 jalapeno peppers, finely chopped (to add some heat, leave some of the seeds in)
  • 6 small clove garlic, minced

I think the blog needs a challenge of some sort & a make-over.
I've noticed that I post way too many deserts (not that there is such a thing)
and not a lot of dinner ideas or breakfast or much variety.
I need some inspiration from you "viewers".
Leave me suggestions on what you'd like to see in the next few weeks?
My camera seems to be missing, so I need to find it before I can do this-
we have to have pictures you know.
How do you "pin it" if there's not a picture?
This is definitely a challenge for me-
I always forget to take pictures.

Stay tuned...
