I feel like this week is packed with lots of meat... but a meal without meat in our house isn't really a meal.

Sunday- Pot Roast
Monday- Hamburger Curry Printable Recipe Card
This is full of flavor and veggies!
2 TBS butter
1/2 cup chopped onion
1 clove minced garlic
1 lb. ground beef
1 TBS curry powder (we like a little more)
1 1/2 tea spoon salt
Dash of: pepper, cinnamon, ginger and turmeric
2 potatoes- diced (I use canned)
1 can stewed or diced tomatoes, whichever you prefer
2 cups green beans
Saute 2 TBS butter, 1/2 cup chopped onion, and 1 clove garlic.
Add in 1lb. of ground beef and brown.
Stir in: curry, salt, pepper, cinnamon, ginger, turmeric, tomatoes, potatoes, and green beans.
Cover and simmer for 25 minutes.
Serve with rice. {we added macaroni noodles instead for the kids}
Tuesday- Chicken Continental PRINTABLE

1 lb. lean ground beef
4 whole chicken breasts - halved/ cut into chunks
1/2 package bacon
1/4 cup flour
1 can cream of chicken soup
1/4 cup sour cream
Pull apart beef and place on bottom of greased crock pot.
Wrap each piece of chicken in bacon and put on top of beef.
Mix flour, soup, and sour cream- pour over top of meat.
Cook on high 3-4hrs. Flake apart with fork when done and chicken is tender.
Wednesday- Stew
Using leftover roast from Sunday night or you can use fresh stew meat (browned).
Dice 4 potatoes
Dice 1 small onion
Dice 1/2 cup celery
Slice 1 big cup of carrots
3/4 can of corn
2 beef bullion cubes
1 can of tomato soup or quart of V8 juice~ use less water
1 3/4 quarts hot water
salt & pepper to taste
Stir it all up in your slow cooker and let it go all day or for 4 hours on high.
Add 1 cup macaroni noodles about 45 minutes before you want to eat it.

Thursday- Slow Cooker Jerked Chicken
This is my revised version from Sandra-Lee
5 boneless skinless chicken breasts
1 cup pineapple juice
1/2 cup brown sugar
1 Tablespoon Jamaican Jerk
1 big cup of sweet chili sauce
1 or 2 chicken bullion cubes
1 cup diced green bell peppers
Place chicken in slow cooker and top with "the sauce". Set on high for two hours then on low for two.
Serve with rice, salad and veggies.
Note: I shredded the left-over chicken and mixed it {along with juice from the crock pot} with rice -not instant- and it was even better as left-overs for lunch.

This is a newer recipe for us, but I always love this type of dish when we go out.

1 lb. Fettuccine Noodles, boiled with a dash of salt and a splash of olive oil
Sliced and Sauteed: Onions, Mixed Bell Peppers & Mushrooms
Drain noodles when done and drizzle with more olive oil and sprinkle pepper, then sprinkle generously with Parmesan cheese.
Can add chicken/steak or shrimp if you want meat.
Serve with salad.

She has told me that her husband requests this one often & we like it too.
Goes great with garlic bread! Sorry I forgot to take a picture of this one too...

8 oz. Mozzarella Cheese
Reserve 1 Cup tomato sauce. Mix sauce, beef, rice, salt, garlic and oregano. Shape into 6 patties 1/2" thick. Bake in 9x13 pan at 350* for 15 min. Remove from oven and drain grease. Dissolve bullion in boiling water and stir in sauce. Pour over patties. Cover and bake 35 min. Spoon tomato sauce over patties and sprinkle with cheese. Bake a few min, uncovered, until cheese melts.
