Quick & Easy Cake Mix Cookies

Need a quick easy treat?  
These are so simple the kids can almost do it all by themselves. 

Devils food cake mix
2 eggs
1/3 cup oil
1/2 bag white chocolate chips
Mix well and drop by spoonfuls.
Bake at 375* for 10 minutes

Yellow cake mix
2 eggs
1/3 cup oil
1/2 bag chocolate chip cookies
Mix well and drop by spoonfuls.
Bake at 375* for 10 minutes

Lemon Meringue Pie

I know I deserve the worst blogger of the year award seems as how I've pretty much abandoned it since I started my "new" job a year ago.   Call me human, but working 10 hours a day and keeping up with our kids is about all I can do. We also just moved a few weeks ago... which was kind of a big scary decision.  So I've had my plate full so to speak. But I am sorry for not keeping up with the blog a little better.  I hope there are still a few followers out there.

One night before we moved we were hanging out with our awesome neighbors (that we miss already) and we decided we needed to invent a Skittle Pie.  How cool would that be?  Ever since I haven't been able to stop thinking about pie!

We went to Village Inn for dinner on Wednesday, just because I knew it was free pie night.  I couldn't pass on the Boston Cream.  Now my wheels are turning thinking of all the pies I want to make for Thanksgiving.  To be honest I'm craving all kinds of comfort foods with the stress of moving, I might gain 50 lbs.

Lemon Meringue has always been one of my mom's favorite pies.  Over time I've come to appreciate it myself.  So here is a pie for you.

You might want to start with the crust.  I'm really not a baker, so I often "cheat" and buy them already made.  But if you have a crust recipe that you like make it first.

Follow the instructions on a box of lemon pie filling.

The tricky part for me is making the meringue and toasting it just right.  It takes a little patience (or the other kind of patient if my sister is reading this LOL), and that's never been a strong point for me.

3 eggs
1/4 tea spoon cream of tarter
1/2 tea spoon vanilla
6 Tbs sugar

Beat egg whites & cream of tartar till foamy.
Add sugar 1 T at a time, beating till stiff.
Add vanilla. Put on pie & bake @ 400* till brown.

Chill in the refrigerator for as long as you can stand it... and then eat the whole pie.
